Sulu and Chekov did not do the same job, not at all. Sulu was the pilot, Chekov was Tactical. (Well, he was in charge of the weapons, at least. Mind you, when Chekov is not in the episode, Sulu is in charge of Tactical.)
The Enterprise D didn't have a pilot, not a chief pilot at least. You have various recurring extras, Wesley, or my personal favourite, O'Brien. (Farpoint)
I'm not convinced you can call any of those 3 the pilot of Defiant, as Kira was commanding/XO, Dax sometimes piloted, but she was the CSO, and Nog didn't really have a function there/
So really it comes down to Travis, and Paris. As much as I like Travis, he didn't really have much of a personality, or a role, so it has to be Paris.
