What next?
So where, if anywhere, do you see this reboot going?
What would you like to see them do next.

What does defeat mean to you?

Klingon-Federation War. Writers are going to forget how easy it is to get to the capital of the Klingon Empire, super-teleport or 5 minute ship voyage, and just have war that began over a misunderstanding (John Harrison wasn't really a Fed). Grandfather of Worf (Jamie Foxx?) will be involved in preventing war.

I have to admit that, as good as Team Abrams is, I'm starting to see the problems inherent in a movie-based trekiverse. Fewer storytelling opportunities, less room for long-term plots and the like, especially for the five-year mission of exploration that Kirk and co. are on. I'm really not sure what the next movie could feasibly be about.

A lot of people complain about the Abramsverse by asking for some "boldly going"... depict a mission of exploration with the ship encountering some strange new world.
Personally I think if you did that, even if you did it well, you'd get a lot of "Well it just feels like an episode of the TV show".

Maybe they explore and then discover someone is causing stars to explode or planets or whatever and they locate it to the Romulans or the Klingons. Or hell Tholians would be cool.
