I don't think ANY Enterprise (excepting the E-A, because she wasn't an Enterprise for very long, and was already pretty old) would ever survive to be retired. They get the most dangerous missions, and that's just how they go.............

If I was an enemy power, I'd actively hunt down the Enterprise. It tends to de-moralize the rest of the fleet, I would imagine.

Uh, technically it did go down due to a plot device, it choose to go through the magic portal.

Or just set a trap. The crew of most Fed starships seem to be quite oblivious to the most damn obvious traps.

Hell, a simple distress signal next to a comm/sensor blocking nebula would do perfectly. The E would calmly wander right into the nebula without the slightest hesitation.

In a cloaked ship, creep up on the big E, and beam half a dozen torpedos on board, including onto the bridge and into engineering. one into each nacelle, into the impulse engines, and the forward torpedo magazine.

That would be an easy way to do it, yeah.
Or you could use a similar tactic with my trap plan above. The E finds a distress call, goes to investigate, and finds a ship with broken engines. The crew of the disabled ship asks for the E to send over spare parts. When the E lowers its shield, the crew of the other ship quickly beams of torpedo into Main Engineering. Boom.
