Unless there is a war going on right then that's exactly what the Federation has always done. Take the best ship, point it toward where no man has gone before and commence boldly going.
The Galaxy is certainly designed for long duration missions. And if they upgrade all of them they could be fast enough to keep at deep space exploration.
If the Galaxies are all out in deep space I'd probably rather be in an Ambassador. Those they'd definitly be keeping within the Federation on diplomatic work at this point.

TNG had "pet vines" they I guess could move around
TAS has Phylosians which were plant people and some others
TOS had a somewhat sentient plant on board called "Gertrude"
I bet there's more.

I liked the Supox in Star Control 2 and Zhaan from Farscape. They're sentient plants. See? I'm non-biased.

Maybe one of the crew is a sentient plant. Thus there needs to be soil in sick bay... god thats a stretch.

On the note of plants while I was looking into plants in trek it turns out the Connie has an Arboretum too. Just a smaller one I suppose. So maybe they're more common than Mikey gives them credit for.
