I've always wondered were those little "defense" ships small fighters, or unmanned probes????

I think they were unmanned.
As to the lone Galor question: Breen frigates had the energy dampener, but didn't seem to be uber-armored or shielded; yet they were able to get to Earth and attack while the UFP was on a war footing.

Incidentally they were made from the hull of a Typhoon class submarine model. The same thing was used for the soliton wave rider, where we get a really good look at it...

If your going into a fight where you are pretty sure there will be heavy casualities like that one they should of just shoved them into life pods and launched them.
