I kinda have to agree, the Ambassador Class is cool for first contact missions.
That aside either Soverign of Galaxy for long duration exploration missions.

Hey the Nebula class isn't a 'Godzilla' ship. It's a good sized multi-role ship.

As a Starfleet Captain? I'd definitely consider something like an Excelsior B-type (i.e. Lakota-style) . . . it's just a sweet innocent harmless little ole Excelsior, right up until the moment it opens up its massive can of buttspanking. I'm fond of that . . . like being an old-fashioned gentlemen who can be a cast-iron SOB when the need arises.
I also thought about something like this once a long time ago . . . a proverbial genie-in-a-lamp granting a choice of ship that I'd have all to myself, in the modern era, for fun and mayhem.
I'd want two . . .
First would be a runabout, just for cruising around in. It's powerful enough to whoop whole countries with, and throw decent little get-togethers in, but it's also a warp Winnebago.
For a mothership, I'd want something decent-sized, but not too big (hanging out on a 42-deck Galaxy Class, even with a whole lotta friends, would get kinda spooky, wouldn't it?). Speed wouldn't be too big an issue, since I wouldn't exactly be planning to spend too much time away from home. But I'd want a holodeck . . . can you imagine the parties you could throw with that? Halloween would never be the same.
I figured a TNG-era Miranda would fit the bill, provided the runabout could park in one of those two big bays. And I presume it would have a Type-15 sitting around somewhere in case I felt it necessary to pick someone up. It's at least small enough to more or less fit in a parking spot.
(Yeah it's an ugly box, but as I thought at the time you probably can't go wrong if you have to *land* to pick up your date.
)

You guys will all probably think I'm N-V-T-S - nuts, but I think I'd go with a
New orleans-class on anti-raider and patrol missions, and then of course outrider duty during fleet actions.
I like the idea of a more intimate ship crew, and being able to establish relationships in one particular area. Plus, I would love to unleash those three torp tubes at once on some little punk pirate...

Realistically the best ship for nearly any mission is the Sovereign. It's the most advanced tactically, speed-wise, scientifically, leisurely...

Actually barring the odd explosion I think the Galaxy would win for Leisure.

I don't think so, really. Of course the galaxy has more of it, but every leisurely thing we've seen on a galaxy would probably be on the sovereign - we've seen/heard of quite a few of them. They'd also be more advanced on the sovereign.

And we don't have any proof that it's the best in science/exploration. The only times we've really seen it in battle.

The fact that it's the most advanced starship in the fleet? And undergoes a further upgrade. And it's the flagship. And it's the fastest. It's pretty obviously the best science ship/explorer.

It's a battleship. Somehow I doubt they bothered to add an Arboretum like the Galaxy has. And I doubt they're set up for civilians.
And I see no reason why it would be the best at science. Again due to being designed mostly for war.
Still I'd think it'd have some science abilities.
Also one could argue that while a Sov would be best for most missions where blowing stuff up is involved you could argue it wouldn't be used for most things.
A Sov would more likely have to go off and fight some crazy new threat ship that's six times its size.
A New Orleans class might get to pick on pirates and things a tenth it's size.
And an Ambassador has good diplomatic capabilities, but starfleet knows it's not a front line warship, so it'd probably get sent to make contact with peacful planets covered in beautiful beaches and free love, whereas a Sov would get sent off to contact some deathworld ringed with warships or the next Cardassians.
