That must have been the show I saw. Thanks, Tsu. Between that one, "Anatomy of a Supercarrier," "City at Sea," and all the other docu-series on the Military Channel, I don't know one show from the other anymore.

I found a picture of the refit Federation class, although it is accompanied by other ships from the afformentioned game Star Trek: Tactical Assault.
Follow the link. The Federation class refit is the one in the middle on the second row.

That's the one. Rochey's right, though - the narrower, taller profile of the refit nacelle gives it a distinctively unappetizing look.

There's also the issue that that's simply a photoshopped Connie. The Fed-class had a slightly lower profile, sans third nacelle, thanks to a shorter neck and a flatter, wider alignment of the port and starboard nacelle pylons.

No less than three sets of forward facing torpedoes. Makes it look too "uber" for a real design.

It's the lowermost tubes that give that impression more than anything else - they look taked on, whereas the others are to at least some extent integrated into the design.

I didn't notice that at my first, casual glance, but you're right - that definitely adds to the vertically-stretched impression.

Well I don't know if anyone else has these, they come from the 'Federation Reference Series" but they were of course authorized by Paramount and while not Cannon I think they shed some light on what a Refit Federation could look like.

It is interesting to note that Graham's problem with the Class, ie the Shuttlebay's placement seems to have been remedied by its removal in favor of Photon Torpedo Launchers.
