I believe they created a new airport because of how congested Hong Kong was becoming. That would be fucking scary to be a passenger on a 747 pulling a maneuver like that.

It's not too bad - pretty cool actually, especially when you look out the window and see peoples washing flapping a few dozen yards off the wingtip. I do wonder, however, if George Lucas visited Hong Kong in 1975 or '76.
