"The Dominion Wars Book One" has a nice explanation of what the Centaur was doing. It was working w/ SI (ie drop-offs and pick-ups, maybe some recon) on the border and as it was supposed to be so secret it had to chase down any ship which could report it back to the Dominion (ie, Siskos captured bug).

That's a cool example after the discussion of irregular tactics on this thread, if I remember correctly that Centaur's captain exhausted the entire book of creative warfare, then added a few chapters of his own.

Finally, "hitting the brakes" and letting a Dominion ship crash into the ship from behind, destroying both vessels. IIRC.
