I feel your pain. I've seen, worked with, and had the refs that are just plain bad. unfortunately, U8's isn't just the development league for players, but for refs also. most beginning refs get U8 games to see how they do. it makes for some aggravating and inconsistent refereeing at this level though.
The tricky thing about dealing with refs is to address your complaints without making it a public screaming match like is commonplace in football, basketball, baseball. I know I've only ever thrown out one coach, and that was in response to some pretty messed up shit, but there is absolutely nothing wrong with the coaching staff inquiring about a call or lack there of, and expressing their opinion, especially if something is being done wrong. Alternatively, the coaching staff could notify the director of referees for your club if it is a widespread problem and they can take care of making sure that all referees they assign to the U8 games are fully aware of the rules if it seems to be a simple problem of ignorance.

Another great thing about Song... when they rescued Amy from the Silence and they were shooting them... Song's back was to the last Silence she shot over her shoulder and killed it. Even though she "forgot" that it was there... her fighting sense knew that something was there and then it needed shot. HA! Great lady!!!
