Cause thats a good speed to start off at until you get out of they system thats full of stuff you can hit.

Even at Warp 1, wouldn't you be out of the system pretty fast?

Warp 1 = c; from the Sun to Earth is 7-8 minutes at c, but Neptune, the outermost large planet in our system is about 4 light-hours from the Sun at 30 AU.

So with older engines it was ok to use warp inside a solar system, but with the newer engines it became a bad idea??

I wouldn't say it's entirely senseless - depending on how the newer engines worked, they might to more damage. By having a much more volumous subspace field, for example.

If you['re leaving the star system, why not just go 'up' and avoid the other planets altogether?

Seriously, does anyone more familiar with Keppler than I know if there is anything that states that most planetary systems would form with most of the orbits in the same plane, as ours?

I wouldn't say it's entirely senseless - depending on how the newer engines worked, they might to more damage. By having a much more volumous subspace field, for example.
Well, TNG era engines were supposed to damage subspace, so maybe they restricted their use in-system due to possible effects?
