I pan-fry a lot of stuff, even chicken sometimes, but I use the cast deep-fryer for French fries, zeppoles and beignets, etc.

I usually pan fry chicken. I prefer to get that nice brown spot on it from resting on the pan bottom. So long as you've got enough oil the rest of the chicken is golden brown but then you get those spots on either side that are just heaven.

If I'm doing an egg-and-cornmeal batter, I deep fry it - if I'm just doing it with panko, I pan-fry it.

Dad did it alright until he put chips in. And then somehow, burning oil managed to bury itself into the hob, and wouldnt turn on (god knows how).

Last day in Paris, so my posting should pick up in regularity again after my jet-lag wears off.
In the beginning the Universe was created. This has made a lot of people very angry and been widely regarded as a bad move.

AFAIK, the US is the only place to call them French Fries. Everywhere else in the English speaking world just calls them chips (unless you're in a McDonald's).

Huh. We have those, mostly sold under the brand name "Pringles." They look like completely uniform potato chips, but are made out of some emulsion of mashed-up potato bits.
