Theory on why the Supernova was like that...
...Q Junior. Probably decided to have a 'joy ride' and accidentally made the star into that Expanding Supernova...
Or a Q on a drinking binge?

Maybe it was a phenomena similar to a supernova, so Spock called it that for ease of understanding. Or something.

The directors have stated in an interview that that sequence wasn't Spock actualy watching it implode in the sky, it was just a sort of representation.

Ok, so regardless of in-movie parts, they actually cleared up most of our questions, that's a good director there.

Let's face it, we can gripe all we want about the unlikely even impossible event of a supernova threatening the galaxy, but it's not the first time star trek writers have claimed handwavium destructive power from a supernova, think about the TKON empire from TNG, that race could move planets and stars, but a supernova destroyed them. It's science fiction, not science fact. Also, maybe the romulan supernova would create a cascade effect on nearby stars? Who knows, but it was a good movie.

"threaten the Galaxy" could mean simply the peace and stability of the Galaxy by the sudden power vacuum. Or it could mean the star would have a Gama Ray burst which would cause huge amounts of the Romulan Empire to suffer which would threaten the Galaxy for the same reasons.
