They're all still canon - just a different universe. I'm not even sure Enterprise is the same continuity as XI, given the differences between the Abramsverse and the Geneverse even before Nero showed up.
Only two things are infinite - the universe and human stupidity, and I'm not sure about the universe: Albert Einstein.
