If you were only going to watch one episode
Okay, so my gf is going to go see the new Trek movie with me...but she isn't really into Trek, so I recommended watching some of the eps on youtube or some other site...so if you were only going to watch one episode from each series, which ones would it be?
In the beginning the Universe was created. This has made a lot of people very angry and been widely regarded as a bad move.

One from each series, huh? Hmmm... OK, my off-the-cuff recommendations for a 'Trek n00b:
TOS: "City on the Edge of Forever"
TNG: "The Inner Light"
DS9: I'll second Tsu on "In the Pale Moonlight"
VOY: Yeesh, maybe "Jetrel"
ENT: Yeesh again, maybe "Demons?" IDK.
In general, I tried to think of things that showed more of the artistry that was possible in 'Trek, and didn't rely too much on "sci-fi-ishness" or prior knowledge of the franchise.
