Maybe the number of human and identicle to human species is just larger then the more alien like species. Maybe humans are the bunny rabbits of the federation? There are a lot of human-like species. Could you tell a human apart from a Betazoid just by looks for example?
I do wish they had more noticeable species on Starfleet ships, like Andorians, Tellarites, or even a Vulcans, in the background.
